From Tlacolula to your table

YULIIA is born in the Espadín agave fields of Tlacolula de Matamoros, Oaxaca, under the hand of our maestro mezcalero Ernesto Chagoya. A young mezcal — 100% certified-artisanal, 40° alcohol — soft on the palate and the spirit at the heart of every recipe on this page.

The bottle itself comes from another state and another set of hands. Since 1956, Margarita Ramírez has painted — in the village of Maxela, Tepecoacuilco, Guerrero — the folk art that dresses every YULIIA: fish, birds, flowers, jaripeos, weddings and dances of her town. She learned the trade from her parents, who learned it from theirs.

Mezcalina

Yuliia Espadín

The classic mezcal serve, in our key. Yuliia Espadín, fresh citrus, a whisper of agave syrup.

Ingredients

  • 60 ml Yuliia Mezcal (Espadín)
  • 30 ml jugo de limón fresco
  • 15 ml jarabe de agave
  • 3 gotas de bitter de naranja
  • Sal de gusano para el borde

Method

Shake with ice. Strain into a chilled coupe rimmed with sal de gusano. Garnish with dehydrated orange wheel.

Yuliia Licor Base Mezcal Maracuyá

Tropical, vibrant, deeply aromatic. The sensuality of passion fruit wrapped around our young mezcal.

Ingredients

  • 60 ml Yuliia Maracuyá
  • 20 ml jugo de limón
  • 15 ml jarabe simple
  • Pulpa fresca de maracuyá
  • Hielo en escarcha

Method

Serve over crushed ice in an old-fashioned glass. Crown with fresh pulp and a mint leaf.

Yuliia Licor Base Mezcal Coco

Coastline, breeze, and sweet wood. A long-afternoon pour with the sea in view.

Ingredients

  • 60 ml Yuliia Coco
  • 30 ml leche de coco
  • 20 ml jugo de piña
  • 10 ml jarabe simple
  • Coco rallado tostado

Method

Blend with ice to a silky consistency. Serve in a hurricane glass, garnish with toasted coconut.

Anastasia Tepeztate

The untamed soul of Tepeztate, served clean. For those who listen to the mezcal before speaking to it.

Ingredients

  • 45 ml Anastasia Tepeztate
  • Una pizca de sal de gusano
  • Rodaja de naranja con chile piquín

Method

Serve neat at room temperature in a clay jicara. Pair with sal de gusano and orange.
